La Pergola (Italy)

Review:

Many Roman food critics call this the best restaurant in the city. We too cast our vote for the Cavalieri Hilton’s spectacular panoramic restaurant high atop Monte Mario. Arrive early and enjoy the view and Rome’s most elegant cocktail bar. In summer, there is alfresco dining on an adjacent terrace. The setting is as elegant as you would expect: trompe l’oeil ceilings, wood paneling, beautifully set tables, flickering candles, and sliding glass walls. The staff functions so beautifully they’ve been compared to a Viennese orchestra.   Since 1994, a talented German chef, Heinz Beck, has been dazzling sophisticated Roman taste buds. Even though he’s not a native, he has taken Italian haute cuisine to dizzying new heights, delighting critics and diners with an array of colors and aromas. The surprises go on and on, as you partake of one of the finest meals you are likely to be served in Italy. The cuisine has balance, harmony, and unusual flavor combinations in such dishes as filet of sea bass with olive oil in an avocado crust (served with a green tomato sauce), or spaghetti with cuttlefish in olive oil, cherry tomatoes, and a parsley sauce. The potato gnocchi comes with caviar and chives, or else you might opt for the soy-sauce poached filet of beef with sake sauce.
