Jaan par André started out life simply as Jaan when it opened as a Khmer-French restaurant in Singapores’ Swissôtel The Stamford but the arrival of André Chiang in July 2008 marked a new image, cuisine style and philosophy. Chiang’s aim is to reveal “the artistic aspiration and inspirations” of the original nouvelle cuisine movement of the 1960s in a more contemporary manner, with groundbreaking dishes such as Forgotten Vegetables – a showcase of 21 seldom seen ingredients, including purple and white carrots, Romanesco Broccoli, black tomato, se grapes, apple flower, ice plant and land seaweed, sourced from small producers across the world – and his constantly evolving dessert Snickers, which is updated every season “to keep guests in constant rapture”. So, nothing like the chocolate bar then.
